Ingredients
  

For the Dough
  • 2 cups all-purpose flour
  • ¾ cup hot water
  • 1 pinch salt
For the Filling
  • 1 cup finely chopped chicken breast (or any protein you prefer)
  • ½ cup gelatin (optional but recommended for best broth results) Dissolve it in warm water
  • 2 tablespoons soy sauce
  • 1 teaspoon ginger, minced
  • 1 teaspoon sesame oil
  • 1 tablespoon scallions, finely chopped
  • to taste salt and pepper

Method
 

Preparation
  1. Prepare the Broth: If using gelatin for your broth, dissolve it in ½ cup of warm water and let it cool. You can also make a simple chicken broth to add more flavor.
  2. Make the Dough: In a mixing bowl, combine the flour and salt. Gradually add the hot water while mixing. Knead until the dough is smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
  3. Mix the Filling: In another bowl, combine the chopped chicken (or your chosen protein) with the chicken broth, soy sauce, ginger, sesame oil, scallions, salt, and pepper. Mix thoroughly and refrigerate for 15 minutes.
Cooking
  1. Shape the Dumplings: Roll small balls of dough into thin circles. Place a spoonful of filling in the center. Carefully pleat the dough around the filling, pinching to seal.
  2. Steam the Dumplings: Place the dumplings in a steamer lined with parchment paper. Steam for about 15-20 minutes until cooked through.
  3. Serve and Savor: Gently lift out the dumplings, serve hot with soy sauce for dipping, and enjoy!

Notes

Dough should be soft yet elastic. Experiment with fillings; seafood or vegetables can make for exciting variations. Store uncooked dumplings in an airtight container in the fridge for up to 2 days or freeze for up to a month.
