  • 2 cups cooked chicken, shredded or diced You can use rotisserie chicken or leftovers.
  • 2 cups fresh spinach Alternatively, use frozen spinach, thawed and drained.
  • 8 oz cream cheese, softened
  • 1 cup mozzarella cheese, shredded Plus extra for topping.
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup breadcrumbs (optional) Use for a crunchy topping.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, sauté the minced garlic over medium heat until fragrant, about 1 minute. Add spinach and cook until wilted, then remove from heat.
  3. In a mixing bowl, combine the cooked chicken, wilted spinach, cream cheese, sour cream, smoked paprika, onion powder, salt, and pepper. Mix until smooth.
  4. Transfer the mixture to a greased casserole dish and top with shredded mozzarella and breadcrumbs (if using).
  5. Bake in the preheated oven for about 20 minutes or until the cheese is bubbly and golden.
  6. Allow to cool slightly before serving and enjoy!

Notes

Serve with a side salad or garlic bread for a complete meal. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
