For the skewers
  • 1 lb boneless, skinless chicken breasts
  • 8 oz mozzarella cheese (cubed) Use fresh mozzarella for the best taste.
  • 3 tbsp olive oil
  • 3-4 cloves garlic (minced) Adjust according to taste.
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Skewers (soaked in water if wooden) Soak for 30 minutes before grilling.

Preparation
  1. Preheat the grill over medium heat. If using wooden skewers, soak them in water to prevent burning.
  2. Cut the chicken breasts into large chunks, ensuring each piece can hold a cube of mozzarella.
  3. In a mixing bowl, combine olive oil, minced garlic, smoked paprika, dried oregano, salt, and pepper to prepare the marinade.
  4. Add the chicken chunks to the marinade, coating them fully. Allow to marinate for at least 10 minutes while preparing the skewers.
  5. Thread the marinated chicken and mozzarella cubes onto the skewers, alternating between the two, leaving space for even cooking.
Cooking
  1. Place the skewers on the preheated grill and cook for about 12-15 minutes, turning occasionally, until chicken is cooked through and mozzarella is melting.
  2. Remove the skewers from the grill and let them cool for a minute before serving.

Notes

Allow the chicken to marinate longer for better flavor. You can add different vegetables to the skewers for variation.
