Preparation
- Preheat the grill over medium heat. If using wooden skewers, soak them in water to prevent burning.
- Cut the chicken breasts into large chunks, ensuring each piece can hold a cube of mozzarella.
- In a mixing bowl, combine olive oil, minced garlic, smoked paprika, dried oregano, salt, and pepper to prepare the marinade.
- Add the chicken chunks to the marinade, coating them fully. Allow to marinate for at least 10 minutes while preparing the skewers.
- Thread the marinated chicken and mozzarella cubes onto the skewers, alternating between the two, leaving space for even cooking.
Cooking
- Place the skewers on the preheated grill and cook for about 12-15 minutes, turning occasionally, until chicken is cooked through and mozzarella is melting.
- Remove the skewers from the grill and let them cool for a minute before serving.
Notes
Allow the chicken to marinate longer for better flavor. You can add different vegetables to the skewers for variation.
