For the Chicken
  • 4 pieces boneless chicken breasts
  • 2 tablespoons Cajun seasoning For seasoning the chicken
  • Salt to taste Salt to taste
  • Wood chips for smoking Optional, for added smokiness
For the Alabama White Sauce
  • 1 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper

Method
 

Preparation
  1. Rinse and pat dry the chicken breasts.
  2. Sprinkle 2 tablespoons of Cajun seasoning over the chicken breasts evenly, ensuring all sides are coated.
  3. Preheat your grill to medium-high heat. Soak wood chips in water for 30 minutes if using.
Grilling
  1. Place chicken breasts on the grill and cook for 6-7 minutes or until grill marks appear, then flip and grill until internal temperature reaches 165°F, about another 6-7 minutes.
Prepare Alabama White Sauce
  1. Mix mayonnaise, apple cider vinegar, lemon juice, Dijon mustard, garlic powder, black pepper, and salt to taste in a bowl. Whisk until well-combined.
Serving
  1. Remove grilled chicken from heat, allow it to rest for a couple of minutes, then drizzle with Alabama white sauce. Serve with your favorite sides.

Notes

For substitutions, use a homemade blend of paprika, cayenne, garlic powder, and dried herbs if Cajun seasoning is unavailable. Storing leftovers in an airtight container in the refrigerator for up to 3 days or freeze for 2 months.
