For the chicken
  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning Adjust based on spice tolerance

For the Alabama White Sauce
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder

Method
 

Preparation
  1. In a bowl, combine the olive oil, Cajun seasoning, salt, and pepper. Coat the chicken breasts with this mixture, ensuring every piece is well-covered. Let it marinate for at least 15 minutes.
  2. While the chicken is marinating, mix together the mayonnaise, apple cider vinegar, lemon juice, garlic powder, and a pinch of salt and pepper in a separate bowl. Stir until everything is well combined and set aside.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Place the marinated chicken breasts on the grill. Cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  3. Once cooked through, remove the chicken from the grill and let it rest for a few minutes.
Serving
  1. Serve the chicken with a generous drizzle of Alabama white sauce on top!

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in a hot skillet or microwave until warmed through. Adjust Cajun seasoning based on your spice tolerance. Chicken thighs or bone-in chicken can be used for richer flavor.
