- Thinly slice the steak, onion, and bell pepper. Mince the garlic.
Layering and Cooking
- In your slow cooker, layer half of the sliced onion and bell pepper, followed by half of the minced garlic.
- Top the vegetables with the thinly sliced steak, sprinkling salt and pepper over it to taste.
- Pour the beef broth over the layers, ensuring the steak is submerged.
- Add the remaining onion, bell pepper, and garlic over the steak.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the steak is tender and flavorful.
- About 30 minutes before serving, add the refrigerated tortellini into the slow cooker, stirring gently.
- Once the tortellini is heated through (approximately 15-20 minutes), stir in the provolone cheese until it melts.
- Ladle into bowls and top with additional cheese or herbs if desired.
Notes
For best results, slice steak thinly against the grain for tenderness. Consider using chicken or turkey for a lighter option. Layering ingredients helps with even cooking.
