  • 1 pound beef steak (such as flank steak), sliced thinly For tender bites.
  • 1 medium onion, sliced
  • 1 medium bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 package refrigerated tortellini Usually 9-12 oz.
  • 1 cup provolone cheese, shredded
  • to taste Salt and pepper

Preparation
  1. Thinly slice the steak, onion, and bell pepper. Mince the garlic.
Layering and Cooking
  1. In your slow cooker, layer half of the sliced onion and bell pepper, followed by half of the minced garlic.
  2. Top the vegetables with the thinly sliced steak, sprinkling salt and pepper over it to taste.
  3. Pour the beef broth over the layers, ensuring the steak is submerged.
  4. Add the remaining onion, bell pepper, and garlic over the steak.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the steak is tender and flavorful.
  6. About 30 minutes before serving, add the refrigerated tortellini into the slow cooker, stirring gently.
  7. Once the tortellini is heated through (approximately 15-20 minutes), stir in the provolone cheese until it melts.
  8. Ladle into bowls and top with additional cheese or herbs if desired.

Notes

For best results, slice steak thinly against the grain for tenderness. Consider using chicken or turkey for a lighter option. Layering ingredients helps with even cooking.
