  • 4 pieces Bone-in, skin-on chicken thighs Adjust according to your family size
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 cup Chicken broth Check for low-sodium options
  • Salt and pepper To taste
  • Fresh herbs (optional) Such as thyme or rosemary

Preparation
  1. Rinse and pat dry the chicken thighs. Season generously with salt and pepper on both sides.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat until shimmering.
  2. Place the chicken thighs skin-side down in the skillet. Allow them to sear for about 5-7 minutes without moving them to create a crispy skin.
  3. Flip the thighs over and add minced garlic and herbs to the skillet. Sauté for another 2 minutes to infuse the flavors.
  4. Pour in the chicken broth, cover the skillet, and reduce the heat to low. Let simmer for 15-20 minutes until the chicken is fully cooked and registers at least 165°F internally.
  5. Serve your delicious chicken thighs warm, drizzling some of that savory liquid from the skillet over the top.

Notes

For best results, be patient while searing the chicken to ensure crispy skin. Marinating overnight can enhance flavor. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
