  • 1.5 lbs beef sirloin, cut into bite-sized pieces
  • 4 medium potatoes, diced Ensure they are all roughly the same size for uniform cooking.
  • 4 tablespoons garlic butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup beef broth

Preparation
  1. Begin by cutting the beef sirloin into bite-sized pieces.
  2. Dice the medium potatoes, ensuring they are all roughly the same size for uniform cooking.
  3. In a bowl, combine the salt, black pepper, and paprika.
  4. Optional: Sear the beef bites in a hot pan for a couple of minutes per side until browned.
  5. In your slow cooker, mix the seared beef (or raw if you're skipping that step) with the diced potatoes.
  6. Pour in the cup of beef broth and add the garlic butter on top.
  7. Set your slow cooker on low and let it cook for 6-8 hours or on high for 3-4 hours.
  8. Once it’s cooked, sprinkle with chopped parsley for presentation, serve warm, and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in the microwave or on the stove, adding a splash of broth for moisture.
