Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute.
- Add the shrimp and cook until they turn pink, about 3-4 minutes. Season with salt and pepper. Stir in the spinach and remove from heat.
- In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to form a roux. Gradually whisk in the milk, cooking until the sauce thickens. Season with salt and pepper.
Assembly
- In a baking dish, spread a thin layer of white sauce at the bottom. Layer noodles, ricotta cheese, shrimp mixture, white sauce, and mozzarella. Repeat until all ingredients are used, finishing with a layer of noodles topped with remaining white sauce and mozzarella cheese.
Baking
- Cover the baking dish with aluminum foil and bake for about 25 minutes. Remove the foil and bake for an additional 10-15 minutes until golden and bubbly.
- Allow the lasagna to cool for a few minutes before slicing. Serve warm and enjoy!
Notes
To enhance flavor, use fresh shrimp and spinach. You can swap in different types of cheese or add vegetables like mushrooms or zucchini for added flavor and nutrition. Allow the lasagna to rest before cutting for better layer retention.
