  • 1 lb shrimp, peeled and deveined Fresh shrimp is best for flavor.
  • 1 cup cooked rice Leftover rice works well.
  • 1 can (10.5 oz) cream of mushroom soup This creates the creamy base.
  • 1 cup shredded cheddar cheese Can substitute with your favorite cheese.
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 1/2 cup milk
  • 1 tsp garlic powder
  • to taste salt and pepper
  • 1/2 cup breadcrumbs (optional) For added crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking dish: Lightly grease a 2-quart baking dish with cooking spray or olive oil.
  3. In a large mixing bowl, combine the cooked rice, cream of mushroom soup, milk, garlic powder, green bell pepper, and onion. Mix well until fully incorporated.
  4. Gently fold in the peeled and deveined shrimp into the mixture. Be careful not to break them apart.
  5. Sprinkle salt and pepper to taste. You can also add other seasonings like paprika or lemon juice for an extra zing.
  6. Pour half of the shrimp mixture into the greased baking dish. Then sprinkle half of the shredded cheddar cheese over it. Add the remaining shrimp mixture and top with the rest of the cheese.
  7. If you’re using breadcrumbs, sprinkle them evenly over the top.
Baking
  1. Place the dish in the preheated oven and bake for about 30 minutes, or until the casserole is bubbly and the top is golden brown.
  2. Take it out of the oven, let it cool for a few minutes, and then dig in!

Notes

For perfecting the casserole, use fresh shrimp if possible and feel free to customize the vegetables. Timely monitoring while baking will prevent shrimp from becoming rubbery. Leftovers can be refrigerated for up to 3 days.
