Ingredients
  

For the Mini Meatloaves
  • 1 pound lean ground meat (beef or turkey) Choose lean meat for a healthier option.
  • 1/2 cup breadcrumbs Regular or gluten-free.
  • 1/4 cup milk Regular or dairy alternative.
  • 1 piece egg For binding the meatloaf.
  • 1 small onion, finely chopped Adds flavor and moisture.
  • 2 cloves garlic, minced For added flavor.
  • 2 tablespoons ketchup Plus more for topping.
  • 1 teaspoon Worcestershire sauce Enhances the savory flavor.
  • Salt and pepper to taste To season the meatloaf.
For the Roasted Potatoes
  • 1 pound baby potatoes, halved Try different varieties for unique flavors.
  • 2 tablespoons olive oil For roasting.
  • 1 teaspoon garlic powder Seasoning for the potatoes.
  • Salt and pepper to taste To enhance flavor.
  • Fresh herbs for garnish (optional) Adds freshness to the dish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the halved baby potatoes with olive oil, garlic powder, salt, and pepper. Spread them out in a single layer on one side of a baking sheet.
  3. In a large bowl, mix together the ground meat, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper until well-combined.
  4. Form the meat mixture into small oval shapes and place them on the other side of the baking sheet, making sure they aren’t touching.
Baking
  1. Place the baking sheet in the preheated oven and bake for about 25–30 minutes.
  2. After 15 minutes, brush a little extra ketchup on top of the mini meatloaves for a flavorful glaze.
Serving
  1. Once they are cooked through and nicely browned, remove from the oven and let cool for a few minutes. Serve warm!

Notes

Feel free to swap breadcrumbs for crushed oats or a gluten-free alternative if needed. Experiment with different types of potatoes for unique flavors. Avoid overmixing to prevent a tough texture.
