- Gather all your ingredients and ensure that the pecans are chopped, as this will help with mixing and forming the clusters.
- In a medium saucepan over low heat, melt the butter.
- Once the butter is melted, slowly stir in the granulated sugar. Mix constantly until it begins to dissolve and take on a light caramel color.
- Carefully add the heavy cream to the mixture. Be prepared for some bubbling! Stir continuously for about 5 minutes until the mixture is smooth and thickened.
- Remove the saucepan from heat and mix in the vanilla extract.
- Stir in the pecan halves until they are evenly coated in the caramel mixture.
- Using a spoon, scoop small amounts of the mixture and drop them onto a parchment-lined baking sheet.
- Before letting them cool, sprinkle a bit of sea salt on top of each cluster for the perfect balance of sweet and salty.
- Allow the clusters to cool completely until they harden, which should take about 15-20 minutes.
- Once cooled, these delightful clusters are ready to enjoy! Store them in an airtight container for later.
