  1. Gather all your ingredients and ensure that the pecans are chopped, as this will help with mixing and forming the clusters.
  2. In a medium saucepan over low heat, melt the butter.
  3. Once the butter is melted, slowly stir in the granulated sugar. Mix constantly until it begins to dissolve and take on a light caramel color.
  4. Carefully add the heavy cream to the mixture. Be prepared for some bubbling! Stir continuously for about 5 minutes until the mixture is smooth and thickened.
  5. Remove the saucepan from heat and mix in the vanilla extract.
  6. Stir in the pecan halves until they are evenly coated in the caramel mixture.
  7. Using a spoon, scoop small amounts of the mixture and drop them onto a parchment-lined baking sheet.
  8. Before letting them cool, sprinkle a bit of sea salt on top of each cluster for the perfect balance of sweet and salty.
  9. Allow the clusters to cool completely until they harden, which should take about 15-20 minutes.
  10. Once cooled, these delightful clusters are ready to enjoy! Store them in an airtight container for later.
