Fruit Filling
  • 3 cups fresh strawberries, hulled and sliced
  • 2 cups rhubarb, chopped into bite-sized pieces
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
Crisp Topping
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup brown sugar, packed
  • ½ cup unsalted butter, melted

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, toss the sliced strawberries, diced rhubarb, granulated sugar, cornstarch, and vanilla extract until evenly coated.
  3. In another bowl, mix the flour, oats, baking powder, salt, brown sugar, and melted butter until crumbly and well incorporated.
  4. Pour the fruit mixture into a lightly greased 9x13 inch baking dish and spread the crumble topping evenly over the fruit layer.
Baking
  1. Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the topping is golden brown and the fruit is bubbling.
  2. Once out of the oven, let it cool for a few minutes before serving.

Notes

Feel free to mix in other fruits like blueberries or raspberries for added flavor. Consider using a gluten-free flour blend for the topping for a gluten-free option. Serve with vanilla ice cream or whipped cream for extra delight.
