- Grate the zucchinis using a box grater. Place them in a clean kitchen towel and squeeze out excess moisture.
- In a large mixing bowl, combine the grated zucchini, flour, Parmesan cheese, minced garlic, egg, salt, and pepper. Mix until all the ingredients are well incorporated and form a thick batter.
- In a non-stick skillet, heat about 1/4 inch of olive oil over medium heat until a small droplet of batter sizzles upon contact.
- Using a tablespoon, scoop out some batter and carefully drop it into the hot oil, flattening it slightly with the back of the spoon. Fry for 3-4 minutes on each side or until golden brown.
- Transfer the bites to a paper towel-lined plate to absorb excess oil. Serve warm with your favorite dips or enjoy them plain.
Notes
Squeeze out excess moisture from the zucchini for crispy bites. Experiment with different cheeses like sharp cheddar for added flavor. Monitor frying temperature to prevent burning.
