Preparation
  1. Start by grating the zucchinis. Be sure to drain any excess water by wrapping the grated zucchini in a clean kitchen towel and twisting it to squeeze out the moisture.
  2. In a mixing bowl, combine the drained zucchini, flour, Parmesan cheese, egg, green onions, minced garlic, salt, and black pepper. Stir well until all the ingredients are combined into a thick batter.
  3. In a large skillet, heat a generous amount of olive oil over medium heat.
Cooking
  1. Using a spoon, scoop out portions of the batter and place them in the heating oil, flattening them slightly with the back of the spoon. Fry in batches to avoid overcrowding.
  2. Cook for about 3-4 minutes per side, or until golden brown.
  3. Once cooked, remove the fritters from the skillet and place them on a plate lined with paper towels to absorb any excess oil.
