  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese (optional) For added flavor
  • 2 large eggs
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons fresh herbs (e.g., parsley or dill), chopped
  • Olive oil (for frying) Enough to coat the bottom of the skillet

Preparation
  1. Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  2. In a large bowl, combine the grated zucchini, salt, all-purpose flour, Parmesan cheese, eggs, black pepper, garlic powder, onion powder, and fresh herbs. Mix until well combined, with a thick yet cohesive mixture.
  3. In a large skillet, add enough olive oil to coat the bottom and heat over medium-high heat until it shimmers.
Cooking
  1. Using a spoon or small scoop, drop the zucchini mixture into the hot oil, flattening each dollop slightly. Cook in batches to avoid overcrowding.
  2. Fry for about 3-4 minutes on each side, or until golden brown.
  3. Transfer the cooked fritters to a paper towel-lined plate to drain excess oil.
Serving
  1. Serve warm with your favorite dipping sauce or topped with yogurt and fresh herbs.

Notes

To ensure crispy fritters, squeeze out excess moisture from the zucchinis. Let the mixture rest for a few minutes before cooking for better binding.
