  • 8 ounces favorite pasta (penne or rotini)
  • 2 cups marinara sauce store-bought or homemade
  • 2 cups shredded mozzarella cheese divided
  • 1 cup cubed bell peppers mix of red and green
  • 1 cup sliced black olives
  • 1/2 cup sliced mushrooms
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper
  • fresh basil for garnish optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, bring salted water to a boil and cook the pasta until al dente, following package instructions. Once cooked, drain and set aside.
Mixing
  1. In a large mixing bowl, combine the cooked pasta, marinara sauce, half the mozzarella cheese, bell peppers, olives, mushrooms, Italian seasoning, salt, and pepper. Stir well until evenly incorporated.
Baking
  1. Transfer the pasta mixture into a greased 9x13 inch baking dish. Spread it out evenly, then top with the remaining mozzarella cheese.
  2. Place the casserole in the preheated oven and bake for 25-30 minutes or until the cheese is bubbly and golden brown.
Serving
  1. Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired, and serve warm.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat individually in the microwave or cover the casserole with foil and heat at 350°F (175°C) for about 20 minutes.
