Preparation
- In a large bowl, combine the sliced chicken breast with soy sauce and let it marinate for about 15 minutes.
Cooking
- In a large pan or wok, heat olive oil over medium-high heat.
- Once the oil is hot, add the marinated chicken, stirring frequently until it’s golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set it aside.
- In the same pan, add a little more oil if needed, and toss in the garlic, ginger, bell peppers, broccoli, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are crisp-tender.
- Return the chicken to the pan, and pour in the sweet chili sauce. Stir well to coat everything evenly and cook for another 2 minutes until heated through.
- Remove from heat, garnish with sesame seeds and green onions, and serve immediately over rice or noodles.
Notes
For a successful stir fry, prep ahead by chopping vegetables and chicken in advance. Use high heat for the best texture and flavor. Substitute chicken with shrimp, tofu, or beef if preferred. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
