Pasta and Base
  • 12 ounces Shell Pasta Use whole wheat or gluten-free for alternatives.
  • 2 tablespoons Olive Oil
  • 2 large Yellow Onions, thinly sliced
  • 3 cloves Garlic, minced Do not burn the garlic.
  • 1 cup Vegetable Broth
  • 1 cup Heavy Cream Can use non-dairy alternative for a vegan version.
  • 1/2 cup Parmesan Cheese, grated Or a Halal alternative.
  • Salt, to taste
  • Black Pepper, to taste
  • Fresh Parsley, for garnish (optional)

Method
 

Cooking the Pasta
  1. Start by boiling a large pot of salted water. Add the shell pasta and cook according to the package instructions until al dente. Drain and set aside.
Caramelizing the Onions
  1. In a large skillet, heat the olive oil over medium heat. Add the thinly sliced yellow onions. Stir occasionally for about 15 to 20 minutes, allowing them to slowly caramelize and develop a rich, golden color.
Adding Garlic
  1. Once the onions are caramelized, stir in the minced garlic and sauté for an additional minute until fragrant.
Combining with Broth and Cream
  1. Pour in the vegetable broth and heavy cream, stirring to combine all flavors. Simmer for about 5 minutes.
Finishing the Dish
  1. Stir in the grated Parmesan cheese and season with salt and black pepper to taste.
  2. Finally, add the cooked shell pasta to the skillet and mix everything thoroughly until well coated and heated through.
Serving

Notes

If you have leftovers, store the pasta in an airtight container in the refrigerator for up to 4 days. To freeze, ensure it's cooled completely and store in a freezer-safe container for up to 3 months. When reheating, add a splash of vegetable broth or cream and warm gently.
