  • 1 medium onion, chopped
  • 1 medium bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Olive oil, for cooking

  1. Start by washing and dicing the potatoes into small chunks. Chop the onion, bell pepper, and mince the garlic.
Cooking
  1. In a large skillet over medium heat, add a splash of olive oil. Once hot, add the sausage. Cook until browned, breaking it apart with a spatula for even cooking. Transfer the sausage to a plate and set it aside.
  2. In the same skillet, add the chopped onion and bell pepper. Cook until softened, about 4-5 minutes. Then add the minced garlic and cook for an additional minute until fragrant.
  3. Add the diced potatoes to the skillet, stirring well to combine. Season with paprika, oregano, salt, and pepper. Cover and cook for 10-15 minutes or until the potatoes are fork-tender, stirring occasionally.
  4. Return the cooked sausage to the skillet with the vegetables. Mix everything together and let it cook for another 2-3 minutes to meld the flavors.
