  • 3-4 lb beef roast Choose a good quality cut of beef.
  • 2 tablespoons olive oil For searing the roast.
  • 4 cloves garlic, minced Adds flavor and aroma.
  • 2 tablespoons fresh rosemary, chopped Can be substituted with thyme or oregano.
  • to taste Salt and pepper Season to your preference.
  • 1 cup beef broth To keep the roast moist during cooking.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Take the beef roast out of the fridge and let it come to room temperature for about 30 minutes.
  3. In a small bowl, combine olive oil, minced garlic, chopped rosemary, salt, and pepper. Rub this mixture all over the roast.
  4. In a hot skillet, sear the roast on all sides for about 2-3 minutes until browned.
  5. Transfer the roast to a baking dish and pour beef broth around it.
Cooking
  1. Roast in the oven for about 1.5 to 2 hours or until the internal temperature reaches 135°F (57°C) for medium rare or 145°F (63°C) for medium.
  2. Take the roast out and let it rest for at least 15 minutes before slicing.
  3. Slice against the grain and serve with your favorite side dishes.

Notes

For perfect results, always check the meat temperature using a thermometer and remember to rest the meat before slicing. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
