Preparation
- Preheat your oven to 350°F (175°C).
- Take the beef roast out of the fridge and let it come to room temperature for about 30 minutes.
- In a small bowl, combine olive oil, minced garlic, chopped rosemary, salt, and pepper. Rub this mixture all over the roast.
- In a hot skillet, sear the roast on all sides for about 2-3 minutes until browned.
- Transfer the roast to a baking dish and pour beef broth around it.
Cooking
- Roast in the oven for about 1.5 to 2 hours or until the internal temperature reaches 135°F (57°C) for medium rare or 145°F (63°C) for medium.
- Take the roast out and let it rest for at least 15 minutes before slicing.
- Slice against the grain and serve with your favorite side dishes.
Notes
For perfect results, always check the meat temperature using a thermometer and remember to rest the meat before slicing. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
