  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 cup beef broth (optional, for added moisture during roasting) Pour into the baking dish if using.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even cooking.
  2. Pat your beef roast dry with paper towels.
  3. In a bowl, combine minced garlic, chopped rosemary, olive oil, salt, black pepper, and onion powder to form a paste.
  4. Rub the seasoning mixture evenly all over the beef roast, poking small holes in the meat to let flavors penetrate.
  5. Place the seasoned roast in a baking dish and add beef broth if using.
Cooking
  1. Roast in the preheated oven for about 2 to 2.5 hours, or until the internal temperature reaches your preferred doneness (medium-rare: about 130°F or 54°C).
Serving
  1. Remove the roast from the oven and let it rest for 15-20 minutes.
  2. Slice against the grain and serve.

Notes

Store leftovers tightly wrapped in aluminum foil or in an airtight container in the refrigerator for 3-4 days. Reheat in a skillet over low heat or in a low-temperature oven with a splash of beef broth to prevent drying out.
