- In a large skillet, bring the vegetable broth to a simmer over medium heat.
- In a medium bowl, mix the flour, baking powder, salt, garlic powder, and onion powder. Gradually add in the milk and mix until just combined.
- Once the broth is simmering, add in the mixed vegetables and diced chicken, if using. Let it simmer for about 5 minutes until the vegetables are tender.
- Using a spoon or cookie scoop, drop spoonfuls of the dumpling mixture into the simmering broth, leaving space between each dumpling.
- Cover the skillet and let the dumplings cook for about 10-12 minutes, or until they are fluffy and cooked through.
- Remove the skillet from heat. Garnish with fresh parsley and serve hot.
