Dumpling Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ cup milk
  • 1 tablespoon olive oil
Main Ingredients
  • 2 cups vegetable broth
  • 1 cup mixed vegetables (carrots, peas, and corn) Any fresh or frozen vegetables can be used.
  • 1 cup diced cooked chicken Optional ingredient.
  • 1 tablespoon fresh parsley for garnish

Preparation
  1. In a large skillet, bring the vegetable broth to a simmer over medium heat.
  2. In a medium bowl, mix the flour, baking powder, salt, garlic powder, and onion powder. Gradually add in the milk and mix until just combined.
  3. Once the broth is simmering, add in the mixed vegetables and diced chicken, if using. Let it simmer for about 5 minutes until the vegetables are tender.
  4. Using a spoon or cookie scoop, drop spoonfuls of the dumpling mixture into the simmering broth, leaving space between each dumpling.
  5. Cover the skillet and let the dumplings cook for about 10-12 minutes, or until they are fluffy and cooked through.
  6. Remove the skillet from heat. Garnish with fresh parsley and serve hot.

Notes

For ingredient substitutions, use any vegetables you have on hand, like broccoli or bell peppers. Avoid overmixing the dumpling dough for best texture. Store leftovers in an airtight container for up to 3 days, reheating gently on the stove.
