  • 8 oz 8 oz of your favorite soft cheese (feta or goat cheese work well) Cut into bite-sized cubes if feta; leave whole if using goat cheese.
  • 1 cup 1 cup assorted olives, pitted (green, black, or kalamata)
  • 1 cup 1 cup olive oil
  • 2 cloves 2 cloves of garlic, minced
  • 2 tablespoons 2 tablespoons of fresh herbs (like thyme, rosemary, or basil)
  • 1 teaspoon 1 teaspoon red pepper flakes (optional) Add according to your preference for heat.
  • Salt to taste
  • Freshly ground pepper to taste

Preparation
  1. Cut the cheese into bite-sized cubes if using soft cheese like feta; leave it as is for goat cheese.
  2. In a bowl, combine the cheese cubes with the assorted olives.
  3. In a measuring cup, whisk together the olive oil, minced garlic, and fresh herbs. Add red pepper flakes for heat if desired.
  4. Drizzle the marinade over the cheese and olives, ensuring everything is well-coated.
  5. Add salt and pepper to taste, mixing gently to avoid breaking the cheese.
  6. Cover the bowl with plastic wrap or transfer everything to a jar with a lid. Allow it to marinate in the fridge for at least 30 minutes (or up to a few days).
  7. Serve the cheese and olives with crusty bread or your favorite crackers.
