  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1 teaspoon dried herbs (such as rosemary, thyme, or oregano)
Optional Toppings
  • to taste sesame seeds or poppy seeds for topping

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the all-purpose flour, whole wheat flour, and salt. Stir to mix. Create a well in the center and pour in the olive oil and water. Add the dried herbs and mix until a dough forms.
  3. Lightly flour your work surface and transfer the dough. Knead gently for about 1-2 minutes until smooth.
  4. Divide the dough into two pieces and roll one piece out into a thin sheet (about 1/8 inch) using a rolling pin.
  5. Cut the rolled dough into desired cracker shapes (squares or rectangles) and transfer to a baking sheet lined with parchment paper.
  6. If using toppings, brush the tops of the crackers lightly with olive oil and sprinkle the seeds on top.
Baking
  1. Place the baking sheet in the preheated oven and bake for about 12-15 minutes or until golden brown, keeping an eye on them to prevent burning.
  2. Once baked, remove the baking sheet from the oven and let the crackers cool completely on a wire rack. Snack away!

Notes

These crackers can be stored in an airtight container at room temperature for up to one week or frozen for longer storage. To restore crispness after freezing, heat in a preheated oven at 350°F (175°C) for about 5 minutes.
