Preparation
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine soy sauce, honey, garlic powder, and black pepper. Add the chicken thighs and coat well. Marinate for 15 minutes.
- Slice your bell peppers and red onion while the chicken marinates.
- Line a baking sheet with parchment paper. Arrange the marinated chicken, bell peppers, red onion, and pineapple chunks in a single layer.
- Drizzle olive oil over the veggies and chicken, and gently toss to coat evenly.
Cooking
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the veggies are tender.
- Remove the sheet pan from the oven and let it rest for a few minutes. Garnish with chopped green onions and serve.
