  • 1.5 lbs Boneless, skinless chicken thighs
  • 1 cup Pineapple chunks (fresh or canned)
  • 1 cup Bell peppers (variety of colors), sliced
  • 1 medium Red onion, sliced
Marinade ingredients
  • ¼ cup Soy sauce
  • 2 tablespoons Honey
  • 1 teaspoon Garlic powder
  • to taste Black pepper
  • 2 tablespoons Olive oil For drizzling over the chicken and veggies
Garnish
  • for garnish Chopped green onions (optional)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine soy sauce, honey, garlic powder, and black pepper. Add the chicken thighs and coat well. Marinate for 15 minutes.
  3. Slice your bell peppers and red onion while the chicken marinates.
  4. Line a baking sheet with parchment paper. Arrange the marinated chicken, bell peppers, red onion, and pineapple chunks in a single layer.
  5. Drizzle olive oil over the veggies and chicken, and gently toss to coat evenly.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the veggies are tender.
  2. Remove the sheet pan from the oven and let it rest for a few minutes. Garnish with chopped green onions and serve.

Notes

For best flavor, use fresh ingredients. Experiment with your favorite vegetables, and ensure the chicken reaches an internal temperature of 165°F (75°C).
