Method
Preparation
- In a large pot, heat the olive oil or butter over medium heat.
- Add the sliced onions, and cook them for about 15–20 minutes, stirring occasionally until they are caramelized and golden brown.
- Once the onions are caramelized, add the rinsed rice to the pot and stir it for a minute to coat the rice in the onion goodness.
Cooking
- Pour in the vegetable or beef broth along with thyme. Increase the heat to high and bring the mixture to a boil.
- Lower the heat to a gentle simmer, cover the pot, and let it cook for about 15–20 minutes, or until the rice absorbs the liquid and is tender.
Finishing Touches
- Once the rice is cooked, fluff it with a fork and stir in half of the Gruyère cheese.
- Top with the remaining cheese, cover for a few moments to let it melt, and then remove from heat.
- Garnish with fresh herbs, if desired, and enjoy your Savory French Onion Soup Rice hot from the pot.
Notes
Consider pairing with a side salad or garlic bread. Leftovers can be stored in airtight containers in the refrigerator for 3-4 days, or frozen for up to 3 months. Reheat on the stove or in the microwave, adding broth to maintain creaminess.
