  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil or butter
  • 1 cup long-grain rice, rinsed
  • 4 cups vegetable or beef broth
  • 1 teaspoon thyme (fresh or dried)
  • 1 cup shredded Gruyère cheese (or a melty cheese of your choice)
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot, heat the olive oil or butter over medium heat.
  2. Add the sliced onions, and cook them for about 15–20 minutes, stirring occasionally until they are caramelized and golden brown.
  3. Once the onions are caramelized, add the rinsed rice to the pot and stir it for a minute to coat the rice in the onion goodness.
Cooking
  1. Pour in the vegetable or beef broth along with thyme. Increase the heat to high and bring the mixture to a boil.
  2. Lower the heat to a gentle simmer, cover the pot, and let it cook for about 15–20 minutes, or until the rice absorbs the liquid and is tender.
Finishing Touches
  1. Once the rice is cooked, fluff it with a fork and stir in half of the Gruyère cheese.
  2. Top with the remaining cheese, cover for a few moments to let it melt, and then remove from heat.
  3. Garnish with fresh herbs, if desired, and enjoy your Savory French Onion Soup Rice hot from the pot.

Notes

Consider pairing with a side salad or garlic bread. Leftovers can be stored in airtight containers in the refrigerator for 3-4 days, or frozen for up to 3 months. Reheat on the stove or in the microwave, adding broth to maintain creaminess.
