Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add the sliced onions and a pinch of salt, stirring frequently until caramelized, about 15 minutes.
- While the onions are cooking, season chicken breasts with thyme, salt, and pepper.
Cooking
- Sear the seasoned chicken breasts in a large pan over medium-high heat for 5-6 minutes on each side, until golden brown.
- Lay the seared chicken in a baking dish. Top each breast with caramelized onions and pour beef broth over everything.
- Sprinkle shredded Swiss cheese evenly over the chicken breasts.
- Bake in the preheated oven for 25-30 minutes, or until chicken is thoroughly cooked and cheese is bubbling and golden.
Serving
- Let the dish cool for a few minutes before serving warm. Enjoy with a side of rice or crusty bread to soak up the broth.
Notes
For substitutions, use provolone or mozzarella if Swiss cheese isn't preferred. Be patient while caramelizing the onions for best flavors. Avoid rushing the browning process of the chicken to retain moisture.
