  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups beef or chicken broth (prefer low-sodium)
  • 1 cup Swiss cheese, shredded
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh thyme or Italian seasoning, for garnish

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, combine olive oil and sliced onions. Cook for approximately 15-20 minutes, stirring often until they are soft and caramelized.
  3. Season the chicken breasts with salt and pepper, and in another skillet, sear them over medium-high heat for 4-5 minutes on each side until golden brown.
  4. Once the chicken is seared, remove from the heat. In a baking dish, add the caramelized onions followed by the seared chicken. Pour the broth over everything.
  5. Sprinkle shredded Swiss cheese on top of the chicken and onions, ensuring it’s well-covered.
  6. Place the dish in the oven and bake for 20 minutes, or until the cheese is melted, bubbly, and golden.
  7. Add a final touch of fresh thyme or Italian seasoning before serving. Enjoy your meal!

Notes

Take your time with onions for better caramelization. Feel free to experiment with seasonings to elevate the dish. Ensure not to overcook the chicken for best juiciness.
