  • ½ cup creamy peanut butter Using creamy peanut butter ensures a smooth consistency.
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons honey or brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar (or apple cider vinegar)
  • ¼ teaspoon red pepper flakes (optional) Adjust according to heat preference.

Method
 

Preparation
  1. Start by cutting the chicken thighs into bite-sized pieces and set aside.
Making the Sauce
  1. In a mixing bowl, combine the peanut butter, soy sauce, honey, minced garlic, grated ginger, rice vinegar, and red pepper flakes (if using). Mix well until it becomes a smooth sauce.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Add the chicken pieces to the skillet and cook for approximately 5-7 minutes, stirring occasionally until the chicken is cooked through and lightly browned.
  3. Pour the peanut sauce over the cooked chicken. Stir continuously to coat the chicken in the delicious sauce for about 3-4 minutes. Ensure everything is evenly mixed.
Serving
  1. Once heated through, remove from heat and serve the chicken over cooked rice or noodles. Garnish with chopped green onions for an added touch.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. To reheat, warm it up in a skillet on low heat, adding a splash of water to help loosen the sauce.
