  • 2 cups chicken broth
  • 1 pound boneless, skinless chicken breast, diced
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 medium onion, chopped
  • 1 tablespoon olive oil

Method
 

Cooking the Rice
  1. In a medium saucepan, combine 1 cup of rice and 2 cups of chicken broth. Bring to a boil, reduce the heat to simmer, cover, and cook until the rice is tender, about 15-20 minutes.
Sautéing Vegetables
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened—about 5 minutes.
Adding Chicken
  1. Stir in the diced chicken and taco seasoning, cooking until the chicken is no longer pink. This should take around 6-8 minutes.
Combining Ingredients
  1. Once the chicken is cooked, add the cooked rice, black beans, and corn to the skillet. Stir everything together until well combined.
Melting Cheese
  1. Reduce the heat to low, sprinkle the shredded cheddar cheese on top, and cover until the cheese is melted—about 3-5 minutes.
