Ingredients

Main Ingredients
  • 1.5 pounds boneless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons freshly ground black pepper
  • 1 teaspoon salt (or to taste)
  • 2 tablespoons vegetable oil (canola or sunflower)
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce (ensure it's halal-compliant)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sesame oil (optional) for an extra depth of flavor
  • Chopped green onions or parsley for garnish

Method

Marinating the Chicken
  1. Combine the chicken pieces, black pepper, and salt in a large bowl. Let it marinate for at least 15 minutes.
Prepping the Pan
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.
Cooking the Chicken
  1. Carefully add the marinated chicken to the hot skillet, spreading the pieces out for even cooking.
  2. Sear the chicken for about 5-7 minutes on one side before flipping it to cook the other side until golden brown.
Adding Aromatics
  1. Add the minced garlic and ginger to the cooked chicken. Stir-fry for an additional 2-3 minutes until the aroma is released.
Final Touches
  1. Drizzle the soy sauce and honey (or maple syrup) over the chicken, stirring to combine.
  2. If using, add the sesame oil for that nutty finish.
Serving
  1. Garnish with chopped green onions or parsley. Serve hot with steamed rice or your favorite side.

Notes

If using halals soy sauce is unavailable, tamari works as an excellent substitute. To add a fiery kick, consider adding some chili flakes. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months. Reheat gently to retain moisture.
