  • 2 cups cooked BBQ chicken, shredded or diced
  • 1 can (15 oz) corn, drained and rinsed
  • 1 each bell pepper (any color), diced
  • 1 small red onion, finely chopped
  • 1 each avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup BBQ sauce, for drizzling
  • Salt and pepper, to taste
  • 1 each Juice of 1 lime

Method
 

Preparation
  1. Cook the BBQ chicken. You can grill, bake, or sauté it until cooked through. Shred or chop into bite-sized pieces.
  2. Open the can of corn, drain, and rinse it under cold water to remove any preservatives.
  3. Dice the bell pepper, chop the red onion and cilantro, and slice the cherry tomatoes in half. Cube the avocado last to keep it fresh.
Mixing
  1. In a large mixing bowl, combine the cooked BBQ chicken, corn, diced bell pepper, chopped red onion, halved cherry tomatoes, and diced avocado.
Dressing
  1. Drizzle the BBQ sauce and lime juice over the salad mixture. Season with salt and pepper to taste, then toss gently until everything is well-coated.
Serving
  1. Transfer the salad to a serving bowl and sprinkle fresh cilantro on top. Serve immediately or chill for 15-20 minutes to let the flavors meld.

Notes

For meal prep, add the avocado and BBQ sauce just before serving to maintain freshness. Refrigerate leftovers in an airtight container for up to 3 days but best consumed within the first day.
