Preheat Oven:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the Sausage Filling:
In a mixing bowl, combine the ground sausage, breadcrumbs, onion, garlic, thyme, paprika, salt, and pepper. Mix well until fully incorporated.
Roll Out the Pastry:
Lightly flour your work surface and roll out the puff pastry into a large rectangle, about 1/8 inch thick. Cut the pastry into two or three long strips.
Assemble the Rolls:
Spoon the sausage mixture evenly down the center of each pastry strip. Fold the pastry over the filling, overlapping the edges slightly, and press to seal. Place the rolls seam-side down on the baking sheet.
Cut and Brush:
Use a sharp knife to cut each roll into bite-sized pieces (about 2 inches each). Brush the tops with beaten egg and sprinkle with sesame or poppy seeds, if desired.
Bake:
Bake in the preheated oven for 20–25 minutes, or until the pastry is golden brown and the sausage is fully cooked.
Cool and Serve:
Allow the sausage rolls to cool slightly before serving. Enjoy warm or at room temperature.
