Preparation
- Start by washing and dicing your potatoes, slicing the sausage, and chopping the onion and broccoli.
Cooking
- In a large skillet, heat the olive oil over medium heat.
- Once hot, add the sliced Halal sausage and sauté for about 5-7 minutes until it begins to brown.
- Add the diced onion and minced garlic, cooking for another 3-4 minutes until the onion becomes translucent.
- Add the diced potatoes, season with salt and pepper, and stir to combine. Cover and cook for about 15-20 minutes, stirring occasionally.
- After the potatoes are tender, add the broccoli florets and stir to combine, then cover and cook for another 5-7 minutes until the broccoli is bright green.
- Give it a final taste and adjust the seasoning if needed, then serve warm.
Notes
You can top with Parmesan or chili flakes for an extra kick. Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
