  • 8 oz pasta (your choice, penne or fettuccine works great)
  • 1 lb sausage (Italian or any preferred Halal-friendly sausage)
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese for serving
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Method

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water before draining.
  2. In a large skillet, heat the olive oil over medium heat. Add the sausage and break it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the minced garlic and asparagus pieces. Continue to sauté until the asparagus is tender, about 3-4 minutes.
  4. Once the pasta is drained, add it to the skillet with the sausage and asparagus. Toss everything together, adding reserved pasta water as needed to achieve the desired consistency.
  5. Add salt, pepper, and red pepper flakes to taste. Finally, sprinkle with grated Parmesan cheese and give it a final toss before serving.

Notes

For Halal-friendly alternatives, consider chicken or beef sausages. Timing is crucial; cook pasta and sausage simultaneously. Avoid overcooking asparagus to retain crunch.
