Ingredients

  • 8 oz tortellini pasta (fresh or frozen)
  • 6 oz salami (sliced and chopped)
  • 8 oz mozzarella balls (bocconcini or ciliegine)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup bell peppers (chopped, any color)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup black olives (sliced)
  • 1/4 cup fresh basil (chopped)
  • 1/4 cup Italian dressing (store-bought or homemade)

Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, usually around 3-5 minutes for fresh or 7-10 minutes for frozen. Once done, drain and rinse under cold water to stop the cooking process.
  2. While the tortellini is cooking, chop the salami, mozzarella, cherry tomatoes, bell peppers, red onion, and olives into bite-sized pieces.
Combine and Dress
  1. In a large mixing bowl, combine the cooked tortellini, salami, mozzarella, cherry tomatoes, bell peppers, red onion, black olives, and fresh basil.
  2. Pour in the Italian dressing and mix everything together until well combined. Taste and season with salt and pepper as needed.
Chill and Serve
  1. Allow the salad to chill in the refrigerator for at least 15-20 minutes to let the flavors meld. Serve chilled or at room temperature.

Notes

To enhance your pasta salad, use the freshest vegetables and cheeses, consider making a homemade dressing, and allow the salad to chill for at least 20 minutes before serving.
