Preparation
- Preheat your oven to 425°F (220°C).
- Peel the sweet potatoes and dice them into even-sized cubes, about 1-inch thick.
- In a large bowl, combine the diced sweet potatoes, minced garlic, olive oil, salt, and black pepper. Toss until well coated.
- Transfer the mixture onto a baking sheet lined with parchment paper, spreading them out evenly.
Roasting
- Roast the sweet potatoes in the oven for about 25-30 minutes, flipping them halfway through.
- In the last 5 minutes of roasting, sprinkle the grated Parmesan cheese over the sweet potatoes.
Serving
- Once done, take them out of the oven and let them cool for a few minutes.
- Serve warm and enjoy!
Notes
For substitutions, try other Halal-friendly cheeses that melt well, like Pecorino Romano. Avoid overcrowding the baking sheet to ensure proper roasting.
