  • 4 medium-sized sweet potatoes, peeled and diced Ensure even-sized cubes for even cooking.
  • 4 cloves garlic, minced
  • ½ cup Parmesan cheese, grated (ensure it’s Halal-certified)
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Peel the sweet potatoes and dice them into even-sized cubes, about 1-inch thick.
  3. In a large bowl, combine the diced sweet potatoes, minced garlic, olive oil, salt, and black pepper. Toss until well coated.
  4. Transfer the mixture onto a baking sheet lined with parchment paper, spreading them out evenly.
Roasting
  1. Roast the sweet potatoes in the oven for about 25-30 minutes, flipping them halfway through.
  2. In the last 5 minutes of roasting, sprinkle the grated Parmesan cheese over the sweet potatoes.
Serving
  1. Once done, take them out of the oven and let them cool for a few minutes.
  2. Serve warm and enjoy!

Notes

For substitutions, try other Halal-friendly cheeses that melt well, like Pecorino Romano. Avoid overcrowding the baking sheet to ensure proper roasting.
