Preparation
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the peeled and cubed sweet potatoes with minced garlic, olive oil, salt, and pepper. Toss everything together until well coated.
Cooking
- Spread the sweet potatoes on a baking sheet in a single layer and roast for about 25 minutes.
- After 25 minutes, remove the sweet potatoes from the oven and sprinkle grated Parmesan cheese over them. Mix gently and return to the oven for an additional 10-15 minutes, or until the cheese melts and the potatoes are tender.
Serving
- Let them cool for a few minutes, garnish with fresh parsley, and serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for about 3-4 days, or freeze for up to three months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
