  • 4 medium sweet potatoes, peeled and cut into 1-inch cubes Choose firm, smooth sweet potatoes free of blemishes.
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • to taste fresh parsley, chopped (for garnish)

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large mixing bowl, combine the peeled and cubed sweet potatoes with minced garlic, olive oil, salt, and pepper. Toss everything together until well coated.

Cooking

  • Spread the sweet potatoes on a baking sheet in a single layer and roast for about 25 minutes.
  • After 25 minutes, remove the sweet potatoes from the oven and sprinkle grated Parmesan cheese over them. Mix gently and return to the oven for an additional 10-15 minutes, or until the cheese melts and the potatoes are tender.

Serving

  • Let them cool for a few minutes, garnish with fresh parsley, and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days, or freeze for up to three months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
