Preheat the Oven:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Prepare the Potatoes:
Cut the red potatoes into evenly sized quarters to ensure even cooking.
Season the Potatoes:
In a large mixing bowl, combine the potatoes, olive oil, garlic, rosemary or thyme, paprika (if using), salt, and pepper. Toss until the potatoes are well coated.
Arrange on the Baking Sheet:
Spread the potatoes in a single layer on the prepared baking sheet. Make sure they are not overcrowded to promote even roasting.
Roast the Potatoes:
Roast in the preheated oven for 25–30 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the edges.
Garnish and Serve:
Remove from the oven and sprinkle with fresh parsley if desired. Serve warm.
