  • 1 rack rack of lamb (about 1.5 to 2 pounds)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper, to taste

Method
 

Preparation
  1. Gently pat the rack of lamb dry with paper towels.
  2. In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, salt, and pepper. Rub this marinade all over the rack of lamb.
  3. Let it sit for about 30 minutes to marinate.
Cooking
  1. Preheat the oven to 425°F (220°C).
  2. In an oven-safe skillet over medium-high heat, sear the rack of lamb for about 2-3 minutes on each side until nicely browned.
  3. Transfer the skillet to the preheated oven and roast for 20-25 minutes for medium-rare, or until a meat thermometer registers 130°F (54°C).
  4. Remove the lamb from the oven and let it rest for 10 minutes before slicing.
  5. Slice between the bones to create individual chops and serve warm.

Notes

For best results, marinate the lamb overnight, and use a meat thermometer for perfect doneness.
