Preparation
- Gently pat the rack of lamb dry with paper towels.
- In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, salt, and pepper. Rub this marinade all over the rack of lamb.
- Let it sit for about 30 minutes to marinate.
Cooking
- Preheat the oven to 425°F (220°C).
- In an oven-safe skillet over medium-high heat, sear the rack of lamb for about 2-3 minutes on each side until nicely browned.
- Transfer the skillet to the preheated oven and roast for 20-25 minutes for medium-rare, or until a meat thermometer registers 130°F (54°C).
- Remove the lamb from the oven and let it rest for 10 minutes before slicing.
- Slice between the bones to create individual chops and serve warm.
Notes
For best results, marinate the lamb overnight, and use a meat thermometer for perfect doneness.
