Preparation
- Preheat your oven to broil. Cut fresh jalapenos in half, remove seeds, and place them on a baking sheet. Roast for about 5-7 minutes until the skin blisters. Then remove, cool, and chop finely.
- In a bowl, combine the softened cream cheese with the shredded cheddar cheese. Add in the chopped jalapenos, salt, and pepper. Blend until nicely mixed.
Assembly and Cooking
- Spread a generous amount of the cheese mixture between two slices of bread. Top with another slice of bread.
- Heat a skillet over medium heat and add butter. Once melted, place your sandwich in the skillet. Grill for about 3-4 minutes or until golden brown. Flip and repeat for the other side.
- Once both sides are crispy and the cheese is gooey, remove from the heat, slice in half, and serve hot. Feel free to add on your favorite garnishes!
