  • 1 medium delicata squash
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon maple syrup (optional) Drizzle for added sweetness
  • to taste Fresh herbs for garnish (optional) For added freshness

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Slice the delicata squash in half lengthwise and scoop out the seeds using a spoon.
  3. Slice the squash into half-moons, about ½ inch thick.
  4. Thinly slice the onion into rounds.
  5. In a large bowl, combine the squash and onion slices. Drizzle with olive oil, and sprinkle with salt and pepper.
  6. Toss everything together to ensure even coating.
  7. Spread the seasoned vegetables in a single layer on a baking sheet.
  8. Roast for about 20–25 minutes or until the squash is tender and the onions are crisp. Drizzle with maple syrup during the last 5 minutes of roasting.
  9. Garnish with fresh herbs before serving.

Notes

If you have leftovers, store in an airtight container in the fridge for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes.
