Preparation
- Preheat your oven to 425°F (220°C).
- Slice the delicata squash in half lengthwise and scoop out the seeds using a spoon.
- Slice the squash into half-moons, about ½ inch thick.
- Thinly slice the onion into rounds.
- In a large bowl, combine the squash and onion slices. Drizzle with olive oil, and sprinkle with salt and pepper.
- Toss everything together to ensure even coating.
- Spread the seasoned vegetables in a single layer on a baking sheet.
- Roast for about 20–25 minutes or until the squash is tender and the onions are crisp. Drizzle with maple syrup during the last 5 minutes of roasting.
- Garnish with fresh herbs before serving.
Notes
If you have leftovers, store in an airtight container in the fridge for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for about 10-15 minutes.
