  • 2 tablespoons olive oil
  • 1 tablespoon ground cinnamon

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss together the diced sweet potatoes and sliced apples.
  3. Drizzle the olive oil over the sweet potatoes and apples, then sprinkle with ground cinnamon, brown sugar (if using), salt, and pepper. Toss everything well to evenly coat.
  4. Line a baking sheet with parchment paper and spread the sweet potato and apple mixture in a single layer.
Cooking
  1. Place the baking sheet in the preheated oven and roast for about 25-30 minutes or until the sweet potatoes are tender and slightly caramelized, stirring halfway for even cooking.
  2. Remove from the oven, and taste to adjust seasonings if needed.
  3. Serve warm.

Notes

For added sweetness, consider drizzling honey or maple syrup. You can also add nuts for extra crunch or spices like nutmeg or cardamom for variation.
