Preparation
  1. Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This temperature will help achieve that crispy skin you’re looking for.
  2. Prepare the Marinade: In a bowl, mix the minced garlic, orange juice, lime juice, olive oil, cumin, paprika, oregano, salt, and pepper.
  3. Marinate the Chicken: Pat the chicken dry with paper towels and place it in a large bowl. Pour the marinade over the chicken, ensuring every piece is well-coated. Let it marinate for at least 30 minutes.
  4. Arrange in the Baking Tray: Place the chicken (skin-side up) on a roasting rack or lined baking sheet.
Cooking
  1. Roast in the Oven: Slide the dish into the preheated oven and roast for about 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Cover with aluminum foil if it browns too quickly.
  2. Rest Before Serving: Remove from the oven and let the chicken rest for about 10-15 minutes before serving.
