  • 2 tablespoons olive oil
  • to taste salt and pepper to taste
  • 1 whole lemon (quartered)
  • to taste Fresh herbs (like rosemary, thyme, or parsley)
  • 4-6 cloves garlic cloves (optional) optional for added flavor

Method
 

Preparation
  1. Preheat your oven: Set your oven to 425°F (220°C) and let it heat up while you prepare the chicken.
  2. Prep the chicken: Remove the chicken from its packaging and pat it dry with paper towels to achieve crispy skin.
  3. Season: Rub the olive oil all over the chicken, ensuring it’s evenly coated. Then, generously sprinkle salt and pepper inside and outside.
  4. Add flavor: Stuff the cavity with quartered lemon, garlic cloves, and fresh herbs.
  5. Tie up: Tuck the wing tips under the body and tie the legs using kitchen twine for even cooking.
Roasting
  1. Place the chicken breast-side up on a roasting pan and roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
Serving
  1. Remove the chicken from the oven and let it rest for 10-15 minutes before carving and serving.

Notes
