Preparation
- Preheat your oven: Set your oven to 425°F (220°C) and let it heat up while you prepare the chicken.
- Prep the chicken: Remove the chicken from its packaging and pat it dry with paper towels to achieve crispy skin.
- Season: Rub the olive oil all over the chicken, ensuring it’s evenly coated. Then, generously sprinkle salt and pepper inside and outside.
- Add flavor: Stuff the cavity with quartered lemon, garlic cloves, and fresh herbs.
- Tie up: Tuck the wing tips under the body and tie the legs using kitchen twine for even cooking.
Roasting
- Place the chicken breast-side up on a roasting pan and roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C).
Serving
- Remove the chicken from the oven and let it rest for 10-15 minutes before carving and serving.
