Preparation
- Preheat your grill or stovetop skillet to medium heat. In a bowl, mix the honey and BBQ sauce until well combined; set aside.
- Season the chicken pieces with salt and pepper. Brush half of the honey BBQ mixture on the chicken, ensuring it is well-coated.
- In another bowl, toss the sliced bell peppers, zucchini, and red onion with olive oil, salt, and pepper until everything is nicely coated.
Cooking
- Place the marinated chicken on the grill. Cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Brush with more BBQ sauce halfway through for added flavor.
- While the chicken is cooking, place the tossed vegetables on the grill. Grill for about 5-7 minutes or until they are tender and slightly charred, turning halfway through.
Serving
- Once everything is cooked, arrange the chicken on a platter, surround it with grilled veggies, and drizzle the remaining honey BBQ sauce over the top. Enjoy!
Notes
If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the chicken and veggies for up to 2 months. Reheat in the oven at 350°F (175°C) for about 20 minutes or microwave on a low setting.
