Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup honey
  • 1 cup barbecue sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
For the Veggies
  • 1 piece bell pepper, sliced
  • 1 piece zucchini, sliced
  • 1 piece red onion, sliced
  • to taste Fresh herbs for garnish (optional)

Method
 

Preparation
  1. Preheat your grill or stovetop grill pan over medium-high heat.
  2. In a small bowl, whisk together honey, barbecue sauce, garlic powder, onion powder, salt, and pepper to create the glaze.
Cooking
  1. Coat the chicken breasts in the honey BBQ mixture, ensuring each piece is well covered. Let it marinate for about 10 minutes.
  2. Place the coated chicken breasts on the hot grill. Cook for about 6-7 minutes on each side or until fully cooked through (internal temperature should reach 165°F).
  3. While the chicken is grilling, prepare the veggies by drizzling the sliced bell pepper, zucchini, and red onion with olive oil, salt, and pepper, and toss to coat.
  4. Once the chicken is almost done, add the seasoned veggies to the grill. Grill them for around 5-7 minutes or until they’re tender and slightly charred.
Serving
  1. Remove the chicken and veggies from the grill. Let the chicken rest for a couple of minutes before slicing.
  2. Arrange the grilled chicken on a serving platter with the grilled veggie medley, and if desired, drizzle any remaining honey BBQ sauce over the top.

Notes

For best results, marinate chicken longer and feel free to use any seasonal vegetables. Always check chicken doneness with a thermometer.
