Preparation
- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs dry using a paper towel.
- In a small bowl, combine paprika, garlic powder, onion powder, chili powder, salt, and black pepper. Mix well.
- Drizzle olive oil over the chicken thighs, then sprinkle the spice rub on both sides, ensuring even coverage.
Cooking
- Place the seasoned chicken thighs in a baking dish or on a sheet pan and bake for 30 minutes or until the internal temperature reaches 165°F (75°C).
- While the chicken is baking, whisk together honey and apple cider vinegar in a small bowl.
- After 30 minutes, remove the chicken from the oven and brush the honey glaze over the top of each thigh.
- Return to the oven for an additional 5-10 minutes, allowing the glaze to caramelize.
- Let the chicken rest for a few minutes before serving.
Notes
For a spicier kick, add some cayenne pepper to your spice mix. Any leftover honey glaze can be drizzled over roasted vegetables or salads for added flavor.
