Pasta and Spinach
  • 8 ounces spaghetti, linguine, or your favorite type
  • 4 cups fresh spinach, washed and chopped
Sauce and Seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1/4 teaspoon red pepper flakes optional
  • 1 tablespoon lemon juice, freshly squeezed
Toppings
  • 1/4 cup Parmesan cheese, grated (or vegan alternative)
  • 2 tablespoons pine nuts, toasted optional

Method
 

Cooking Pasta
  1. Begin by bringing a large pot of salted water to a boil. Once boiling, add your pasta and cook according to the package instructions, usually around 8-10 minutes, until al dente. Make sure to stir occasionally.
Preparing Spinach
  1. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  2. Stir in the chopped spinach, salt, and black pepper, and continue to cook for 2-3 minutes, or until the spinach is wilted.
Combining Ingredients
  1. Drain your pasta, reserving about 1/2 cup of the pasta water. Add the cooked pasta to the skillet with the spinach. Drizzle lemon juice over the top, then carefully toss everything together. If the mixture seems dry, add reserved pasta water as needed.
Serving
  1. Finish by sprinkling grated Parmesan cheese and toasted pine nuts on top. Serve immediately, and enjoy your lovely Quick Spinach Pasta!

Notes

For substitutions, feel free to use gluten-free pasta or add other vegetables like tomatoes or bell peppers. Avoid overcooking the pasta for the best texture.
